What is beef on weck?
Beef on weck is Buffalo's signature sandwich — invented in Western New York in the late 1800s and still served almost exclusively here. It's a kummelweck roll (a Vienna roll topped with caraway seeds and coarse rock salt) piled with thinly sliced rare roast beef, dipped in au jus, with a smear of fresh horseradish.
We slow-roast the round, hand-slice it to order, and serve it on rolls baked fresh. The horseradish bites, the salt grounds it, the au jus brings it together. It's not a sandwich — it's the sandwich, if you grew up in Buffalo.
